20+ PLANT BASED SPRING RECIPES


Spring is definitely in the air… can you feel it?! The weather is absolutely beautiful here in Calgary as we approach Spring Equinox — and I couldn’t be more thrilled! I’ve been taking every opportunity to get outside to enjoy long walks, runs and hikes as I work towards my health and wellness goals. Each year as we transition into spring, I also find myself  lightening up our meals and incorporating lots of fresh, seasonal produce, edible flowers and bright, herbaceous flavours! Over the last couple of years I’ve begun publishing seasonal recipe roundups here at JustineCelina — and in reviewing my archives, was surprised to discover that I hadn’t yet created a spring version. So, I’ve scoured my virtual recipe box to compile my favourite 20+ Plant Based Spring Recipes across culinary categories, from breakfast through happy hour! If you’re looking for some healthy, veggie-centric (and largely vegan), spring meal ideas utilizing all the gorgeous seasonal produce available to us from March though June, you’ve come to the right place!

While I’m perpetually testing new recipes, I’ve also published a solid repertoire of spring-inspired eats over the past 6 years (some of which are Wild Rose D-Tox Friendly!). Today I’m excited to share them all with you in this convenient, easy-to-browse format that you can come back to again and again. As always, my recipes are simple, seasonal, free of dairy, gluten and refined sugar and packed full of  fresh, nourishing ingredients — perfect to make after a weekend grocery run or trip to the farmer’s market! Happy New Years Eve Eve, craft COCKTAIL lovers! After a restful holiday vacation, I’m back today with a fresh cocktail recipe (and a fun giveaway) to help you send 2020 off in style! My Gilded Vanilla Pear Sparkler is a glitzy, French 75 inspired sparkling cocktail nuanced with an elegant seasonal flavour profile and premium ingredients (including Eau Claire Distillery’s 24 karat gold infused Christmas Gin!). Although this NYE in quarantine is unlike the celebrations of years past we’ve become accustomed to, that doesn’t mean it has to be any less glamorous or memorable — and if you’re looking for an NYE inspired sip to celebrate the end of a challenging year, I have just the recipe. HONEYED SASKATOON CHERRY GIMLET


After what has undoubtedly been the longest month of my life, I know one thing for sure… I need a stiff drink! Who’s with me?! Each March, I eagerly await Spring Equinox and typically celebrate its arrival with the publication of a fresh, seasonally inspired cocktail — but March 2020’s events really threw my editorial calendar for a loop. Although this recipe is publishing a bit later than I had originally intended, I can assure you it’s been tested to perfection — in fact, there was rarely an evening that passed this month when I didn’t find myself shaking up a Honeyed Saskatoon Cherry Gimlet (if you follow along with my Instagram Stories, you can attest to this!). This cocktail highlights Eau Claire Distillery’s recently re-released Saskatoon Honey Gin — and I’ve teamed up with them give away a full sized bottle (along with a few other goodies!) to one of my Canadian friends to help lift your spirits and keep your home bars stocked!

Happy love day, friends! This year, I’m putting a PANTONE 2019 Colour of the Year spin on Valentine’s celebrations with a warm, pink-hued introduction to all things Living Coral! By now, you’ve likely heard about 2019’s hottest hue — either here at JustineCelina, or elsewhere online. As a creative professional, I’ve followed PANTONE (the global colour authority for creative industries) for inspiration my entire career. In fact, I even have a section dedicated to them here on the blog to categorize all my PANTONE inspired work throughout the years! 2018 REVIEW + 2019 GOALS


Well hello, friends! It’s been a little while since I’ve posted — I took some time during the first half of this dry January (it’s actually been great!) to reflect on the past year, get re-inspired and really put some thought into what I’d like to achieve in 2019. It’s been a very valuable exercise, so thank you for your patience! Today I’m dishing on everything I’ve discovered in this real, raw, lengthy (we’re talking the longest post I’ve ever written!) read recapping 2018 and sharing my intentions, aspirations and goals for the new year — plus exactly how I plan to achieve them!

When I look back on my goals post from last year, I feel grateful to be in a much better head space and place in my life — although it was a long road to get here. Longtime readers will know I’m always very transparent about the staggering amount of work that goes into blogging, content creation and creative entrepreneurship — and from the day I stared this blog in March of 2015 through to the end of 2017, I hustled hard. As a result, I entered 2018 feeling completely burnout, uninspired and unsure of how to proceed. I knew a change was necessary for me to move forward and progress in a way that would allow for more balance and well being in my life (and therefore more inspired work), but I wasn’t exactly sure how to get there. I felt like I needed to slow down and take life as it came, rather than creating an exhaustive list of all the things I felt I needed to accomplish — and I spent 2018 doing just that. I changed course and made chasing my passions for HOME and FASHION based content my first priority, which resulted in a pretty monumental year here at JustineCelina. That said, the largest shifts I made were off of these pages, in my mental and physical health, relationships and life in general. Fast forward to January of 2019 and I’m feeling energized, more inspired and productive than ever — and ready to make 2019 my best year yet! HOMEMADE DAIRY FREE COCONUT RUM EGGNOG


Happy winter solstice, beautiful people! I’m back today with my Homemade Dairy Free Coconut Rum Eggnog — a festive holiday beverage that’s been in my family for decades, but has recently undergone a contemporary, plant-based makeover! I have so many cherished memories of our neighbours making this eggnog for everyone on our country road to enjoy on Christmas Eve (it never lasted long!). Unfortunately, over the years as I developed a dairy sensitivity I was no longer able indulge — that is, until last holiday season! I decided it was about time to give my favourite eggnog recipe a clean, dairy-free makeover by swapping milk and heavy creams with coconut-based alternatives, regular eggs for the free-run, local, farm-fresh variety, table sugar with 100% pure Canadian maple syrup, spiced rum for Eau Claire Distillery’s seasonal, Limited Edition Gin Rummy, infusing our homemade eggnog with cinnamon sticks and topping it off with decedent dark chocolate shavings. As always, this festive cocktail is free of dairy, gluten and refined sugar — and has become my favourite healthier holiday indulgence!

We actually perfected this recipe last holiday season (who remembers the Stories?!) shortly after I discovered Eau Claire Distillery (I’ve since used almost every single spirit they make in my COCKTAILS!). During our lazy, cozy days in the country between Christmas and New Years Eve, I took a trip to the visit their distillery in Turner Valley with my Mom (who loves gin) and my brother (who was home from New York and loves cocktails) for a tour and tasting — and that’s where my love affair with these incredible, farm-to-glass, artisinal spirits began. For their Christmas presents, my Mom and brother chose a bottle of their favourite spirit, on me. Gin Rummy was Jared’s spirit of choice — a unique, wintery, gin-meets-rum remix boasting warm notes of winter spice with a botanical, herbaceous backdrop. It was actually this limited edition spirit that inspired the makeover of our favourite holiday eggnog recipe — as soon as it hit my lips, I knew it was the missing ingredient! As we enjoyed the second batch of experimental eggnog for New Years Eve, my family confessed they actually liked it better than the original version — and that’s when I knew I had to share our update Homemade Dairy Free Coconut Rum Eggnog with you! LATE HARVEST SPICED APPLE SANGRIA


I bet you thought I’d abandoned sangria for COCKTAILS, didn’t you? Although sangria was definitely my first love, as I’ve dived deeper into recipe development and mixology here at JustineCelina, my foray into cocktailing over the past 3.5 years was something I never would have predicted (I’m a huge wino and I thought I’d always prefer wine based libations to cocktails!). Nope. I’ve always wanted to create an autumnal sangria incorporating October’s beautiful BC apples and late harvest wine, but could never find the right spirit to bring it to life — that is, until now!
