Happy Saturday! Today I’m sharing the recipe for my Golden Kiwi Piña Colada Popsicles — a nourishing summer treat made with freshly blended tropical fruit, nutritious greens and decadent coconut cream. These popsicles are all-natural, vegan and free of refined sugar and gluten. Although they taste like a tropical cocktail, they’re made with just 5 ingredients and they’re fun, quick and easy to prepare! They’re picky eater tested and kid approved, making them family friendly and a perfect sweet indulgence for hot summer days. I’ve said it many times here at JustineCelina, but I believe you can nourish and treat yourself at the same time. These cheerful summer popsicles are packed full of so many amazing vitamins and nutrients — largely in part to the gorgeous, golden kiwis used in this recipe. If you like piña coladas… well, then you’ll love this clean twist on a tropical classic!
How stunning are these Zespri SunGold Kiwifruits? They’re the star of the show in my Golden Kiwi Piña Colada Popsicles and they’re equally as nutritious and delicious as they are beautiful. If you’ve never tried a golden kiwi, you’re definitely missing out! They’re sweeter, juicier and less sour than the regular green variety and they pair perfectly with the piña colada inspired flavours in this recipe!
These golden kiwis are also packed full of vitamins C and E, potassium and fibre, they’re low FODMAP, great for your gut and can help control blood sugar. Plus, studies have shown that eating kiwifruit can improve your mood and vitality — so come on and get happy! They’re a powerhouse addition to these tropical popsicles. Zespri SunGold Kiwifruits are available at your local supermarket from May through October, so keep your eyes peeled for them on your next grocery run.
I’m kiwi crazy in the summertime. What I love about kiwis is they come in their very own natural packaging and they’re so easy to grab for a quick snack. My favourite way to eat them is to slice them down the centre and scoop the flesh out with a spoon (and straight into my mouth)!
I mentioned that these Golden Kiwi Piña Colada Popsicles are made with just 5 ingredients, so let’s chat about the rest of them! Basically, we’re making a smoothie base here and freezing it into popsicle form. Both of my staple smoothie ingredients are present in this recipe — bananas and spinach. Bananas give the popsicle base a smooth, creamy consistency and also pack it full of potassium, while spinach does your skin, hair and bones good. It’s also very high in iron, vitamins and minerals. The best part is that you can’t taste it at all in this recipe. It just adds a gorgeous green hue and tons of nutrition to the popsicles without any chance of it being detected by kids or picky eaters. If you have a little one that refuses to eat their greens, this is a fun way to sneak some some extra nutrition to their diet!
Coconut cream is my favourite dairy-free ingredient to add a touch of decadence to desserts, treats and breakfasts. It can be a bit tricky to find, so feel free to substitute it with regular coconut milk. Pineapple is packed full of digestive enzymes and adds a tropical flair to these popsicles. To finish things off, I added a splash of pure rum extract to the popsicle base — it really makes this piña colada inspired flavour profile sing.
GOLDEN KIWI PIÑA COLADA POPSICLES
Yield: 4 medium popsicles (or 2 cups of popsicle mixture)
Ingredients
• 3 Zespri SunGold Kiwifruits
• 1/2 cup pineapple
• 1/2 cup spinach
• 1 cup banana
• 1/2 cup coconut cream or milk
• 1/4 tsp pure rum extract
Instructions
1. Add 2 Zespri SunGold Kiwifruits, pineapple, spinach, banana, coconut cream and rum extract to your Vitamix (or similar) and blend until smooth.
2. Pour the blended popsicle mixture into molds, filling to a 1/2 inch from the top.
3. To decorate the sides, skin 1 Zespri SunGold Kiwifruit and slice thinly. Slide the kiwi slices down the sides of each popsicle. Remember — these aren’t meant to be perfect, so have some fun with placement! I found the smaller slices worked well at the tops of the popsicles and the larger pieces worked well towards the bottom. If you want to make them really pretty, you can use a small spoon to press the kiwi flesh against the side of the popsicle mold and use a chopstick to work out any air bubbles before you pop them into the freezer!
4. Add a popsicle stick to the centre of each mold and allow them to freeze for at least 3 hours before enjoying.
