MEDITERRANEAN RAINBOW BUDDHA BOWL

Want to eat the rainbow this spring? My Mediterranean Rainbow Buddha Bowl is inspired by the vibrancy of Mediterranean culture, sun drenched days and fresh, colourful ingredients! These festive, nutrition packed Buddha bowls are an explosion of plant based flavours, textures and colours sure to leave you feeling fully satisfied, but never stuffed. An unconventional medley of quinoa, chick peas, cucumbers, pickled beets and carrots, olives and medjool dates are topped with zingy Lemon Za’atar Vinaigrette, a generous dollop of Sabra Greek Olive Hummus and a kiss of fresh mint. The best part? These jubilant Buddha bowls can be on your table in less than 30 minutes and enjoyed year round!

As a hummus lover, I’m thrilled to be partnering with Sabra Canada to bring you my Mediterranean Rainbow Buddha Bowl today! Although typically I’m a very from-scatch cook, there are certain pre made items I enjoy picking up when I’m short on time — and Sabra hummus is one of them. It’s almost exactly like what I make at home (gluten and dairy free with a very simple, clean ingredient list) but with far less effort and tons of flavours options readily available! If you love hummus (and entertaining) just as much as I do, stay tuned for details on how to enter the #DipInWithSabra contest towards the bottom of this post for your chance to win a unique, in-home dining experience for yourself and 14 friends this season!

SPICED STRAWBERRY WATERMELON GAZPACHO

The grass is green, the trees are blossoming (finally!) and I think that’s cause for celebration! If you’re looking to treat your taste buds to something refreshing after what was quite possibly the longest winter in Canadian history, embrace spring’s bountiful produce with my Spiced Strawberry Watermelon Gazpacho. This pretty, pink (yep, still riding that Spring 2017 Pantone Fashion Color Report wave), chilled soup is the perfect menu addition for your next spring soirée, baby or bridal shower, or anytime you’re hosting your girlfriends and want something fuss free, fresh and festive!

My Spiced Strawberry Watermelon Gazpacho is so simple, I almost can’t call it a recipe — but I’ve been meaning to publish this one since last summer! I popped over to Blushlane (a new organic market that just opened in my neighbourhood) on Friday and was so inspired by the beautiful strawberries, basil (I picked up a gorgeous basil plant… let’s hope I don’t kill it!) and mini watermelon that I knew I had to channel them into this recipe. With just 10 ingredients (seasonings and garnish included!) this fruity spin on traditional gazpacho comes together in just 10 minutes! So grab a delicious glass of rosé (I’m enjoying a Spanish Rioja!) and kick back with me tonight for the details on this modern, seasonal spin on a classic Spanish dish while I catch you up on a few cool things that have been happening the scenes lately — I can’t share a lot right now, but if you followed along with my Insta Stories last week, you may have an idea!

SPRINGING FORWARD + SEASONAL WARDROBE STAPLES

I’m back today with the first of many Spring 2017 FASHION posts coming to JustineCelina — and it feels fantastic! Originally, this look was scheduled for last month, but shooting style content with a fully dressed finger was decidedly… less than glamorous. Now that I’ve healed up a bit I couldn’t wait to jump back in front of the camera (please excuse the Band-Aid!) and chat about some of my Seasonal Wardrobe Staples. It’s been a long winter on the Alberta prairies, but I think it’s safe to say spring has finally arrived!

If you’re looking to refresh your spring style with a few key pieces this season, I’ve totally got you covered today as we spring forward. Although this outfit definitely incorporates a few trends (keep your eyes peeled for several upcoming Spring 2017 TREND GUIDES!) it’s also comprised of spring wardrobe building blocks and updated basics. You may remember me mentioning I wanted to rebuild my wardrobe with quality pieces this year — and I’m excited to share some of those foundational staples with you! Today we’re chatting about the Spring 2017 Pantone Fashion Color Report and simple ways to translate seasonal colour trends into your personal style, Mom jeans (sorry… they’re not going anywhere), step hem denim, blush and pastel hues, basic tees, mini bags, a quintessential spring shoe, oversized shades (obviously!) and a beautiful, everyday lip!

Soft Pink Maxi Blazer with Sleeves | Sleeveless V-Neck Bodysuit | Trashed Mom Jeans (similar) | Nude Pointed Toe Pumps (similar, similar, similar, similar) | Grey Faux Leather Satchel | Round Cutout Sunglasses | Layered Circle Pendant Necklace, Layered Geo Necklace | Rose Gold Skinny Bracelet Watch | NARS Audacious Lipstick in Brigitte

APRIL 2017 BEAUTY FAVOURITES

Today’s Monthly Beauty Favourites is a bit different from the norm — believe it or not, there’s no makeup included! With my finger injury derailing the past couple of weeks, to be completely honest, putting on makeup when I didn’t need to wasn’t high on my priority list. Since I spent half of April laying low and healing up, as you can imagine it was pretty low key beauty wise! For the first part of the month, I immersed myself in fragrance for my Spring / Summer 2017 Fragrance Edit and was in final testing stages for the Marc Jacobs Beauty Le Marc Liquid Lip Crème post I published mid month. Other than that, experimenting with new beauty products when everything took at least twice as long to do with an injured finger just didn’t interest me — so I took some much needed, makeup free downtime. It was refreshing!

For a completely different change of pace, my April 2017 Beauty Favourites posts is short and sweet with just 3 products included — but they’re 3 products I used almost daily this past month. Learn more about an indulgent, natural, vegan lotion, a stunning new fragrance (those of you who’ve been following along with my Insta Stories recently may already know what I’m talking about!) and a great eyelash curler. And not to worry — my makeup loving little soul is already into some incredible new beauty products this month that you’ll be hearing all about in my May Beauty Favourites!

APRIL 2017 SOUNDTRACK

My April 2017 Soundtrack is one of my favourite Monthly Soundtracks I’ve shared in quite awhile. I’m not sure what it was (being laid up at home for 10 days while my finger recovered probably had something to do with it!) but I was in such a musical mood this month and discovered so many incredible, inspiring artists along with way.

April’s Soundtrack is chill, happy and upbeat with lots of alternative, indie and electronic vibes — plus a healthy dose of folk and hip hop thrown in for good measure. There have been so many standout tracks on rotation this month, but Donovan Woods It’ll Work Itself Out, a really cool, stripped down remix of Don’t Dream It’s Over, Louis the Child and Elohim’s Love is Alive, Mating Ritual’s Cold, Chet Porter Chelsea Culter’s Stay, One Man Dancing’s Blank Page, Hollow Cove’s Coastline, RAC and Roastam’s This Song, Jessie Early’s Body Can’t Hold, Louis the Child and Ashe’s World on Fire, Utah’s No Coast, CLAVVS Silver Tongue, Paperwhite’s Human Nature, Fallen Roses and B dom’s Yours and Nobody Else’s, The Chainsmoker’s The One, Skrux’s Our Fragment, Goldroom’s Till Sunrise, Emmit Fenn’s Blinded, The 1975’s A Change of Heart, Rachel K Collier’s Paper Tiger, No Suits and Abhi The Nomad’s I’m Good and Stonefox’s Dreamstate sounded particularly good to my ears (I’m only about halfway through the playlist but I’ll park it there!). I can’t wait for you to hear them in this 5 hour, 82 song playlist!

VANCOUVER TRAVEL GUIDE

I spent a few days in the Vancouver area last month — and today I’ve partnered with American Tourister to share my first ever TRAVEL GUIDE here at JustineCelina! I’ve traveled with Samsonite luggage for many years, so when their sister brand American Tourister got in touch last month, I jumped at the opportunity to test drive a piece of luggage from the range. This fun iLite Max 25″ Spinner was the perfect travel companion on this whirlwind trip to the west coast!

Anytime I visit a new destination, I’m asked for my list of must sees and do’s from the area and have always compiled a list of recommendations — ready to send out for anyone who requests one. Since I’m asked for these recommendations often, in 2017 I’ll be sharing this type of content here at JustineCelina, embracing the opportunity to make my TRAVEL GUIDES more comprehensive and easily accessible. See the Vancouver area through my eyes today as I share packing tips and trip highlights — including my favourite neighborhoods, restaurants, coffee shops, wine and spirit recommendations, shopping hotspots, off the beaten path locales, quirky boutiques and a day trip to the island (I’m even taking you along to a cookbook launch!). If you’re looking to temporarily satisfy a case of wanderlust or are simply craving a change of scenery, come along as we venture to Canada’s west coast in style with Samsonite!

FESTIVE VEGAN SALAD WITH CRANBERRY DIJON VINAIGRETTE

Do you have a plant based eater or vegan attending your dinner party this season, but have absolutely no idea what to feed them?! Relax, my friends — I have just the recipe! The best part about my Festive Vegan Salad with Cranberry Dijon Vinaigrette is that I bet you have most (if not all) these ingredients already stocked in your kitchen for the holidays. This festive medley of fruits and veggies is hearty, satisfying and loved by herbivores, omnivores and carnivores alike. It’s the ultimate no-fuss addition to any dinner table this season!

Eat the rainbow and fuel up on the good stuff during this indulgent time of year — a powerhouse mélange of apples, mandarin oranges, brussel sprouts, shredded beets, roasted acorn squash, toasted walnuts and a tangy Cranberry Dijon Vinaigrette comprise this nourishing holiday salad. It pairs perfectly with turkey, or can be enjoyed alone for a vegan dinner option that won’t leave guests hungry for more. This showstopping salad comes together in less than 30 minutes and keeps for up to 3 days (like most things in life, it gets better with age!) — because we all know the best part about Christmas dinner is the leftovers!
