JANUARY BLUES, 2018 PLANS + MY 300TH BLOG POST!


I kept flip flopping back and forth about this post — and that’s part of the reason it’s getting to you on February 1st, rather than January 1st. Should I just publish the TREND GUIDE I had originally planned for these photos? Should I save these thoughts for a traditional New Year, New Goals style post, or my 3rd Blogiversary? Should I open up about all these things? Or should I just proceed with regularly scheduled programming? Do people like more personal posts? Is it okay to publish 2 posts in one day? Will anyone even notice or care?

These are exactly the kind of over analytical, consuming thoughts that I can pretty much guarantee all creatives, bloggers and content creators have faced at one point or another while they’re in the process of creating whatever it is they create. But today, instead of the FASHION content I had originally written to accompany these images, I’m going to share something that’s been on my heart and my mind for the entire month of January. This year, there will be no New Year, New Goals post, like I’ve published every January since starting JustineCelina almost 3 years ago. There aren’t any styled flatlays with planners, coffee and flowers today — because here’s the truth. If you want to make real changes in your life, all the planners, scheduling tools and cute stationary in the world won’t do it for you. Only you can do that for yourself. So today, it’s just me.

SPRING VEGETABLE STIRFRY WITH COCONUT GINGER TOFU (WILD ROSE D-TOX FRIENDLY!)


Do you remember when we did the Wild Rose D-Tox back in March? If you were following along on Insta Stories, I shared (almost) every meal I made during those 12 days. You may also remember me raving about how incredible our Day 1 dinner was — well, today I’m finally sharing the recipe for my Spring Vegetable Stirfry with Coconut Ginger Tofu with you!

Initially this recipe it was a team effort, with both of us tossing ideas around and throwing things in the pan while this stirfry came together. And we both couldn’t stop eating it! It was the best recipe to come out of our D-Tox. Since the premade sauces and condiments I would typically use in a stiryfry-style dish (think soy sauce, fish sauce, peanut butter, etc.) weren’t permitted, we went in a completely different direction! The result was a colourful medley of spring vegetables in a coconut milk-based sauce — flavoured with garlic, ginger, lime and simple pantry spices ontop of a bed of brown rice, finished with toasted almonds for some extra crunch and protein. In my quest for nut based milks with a D-Tox friendly ingredient lists (not an easy feat, my friends!), I found Almond Breeze’s Unsweetened Almond Coconut Beverage and am thrilled to be partnering with Almond Breeze again today to bring you my Spring Vegetable Stirfry with Coconut Ginger Tofu! GOLDEN KIWI PIÑA COLADA POPSICLES


Happy Saturday! Today I’m sharing the recipe for my Golden Kiwi Piña Colada Popsicles — a nourishing summer treat made with freshly blended tropical fruit, nutritious greens and decadent coconut cream. These popsicles are all-natural, vegan and free of refined sugar and gluten. Although they taste like a tropical cocktail, they’re made with just 5 ingredients and they’re fun, quick and easy to prepare! They’re picky eater tested and kid approved, making them family friendly and a perfect sweet indulgence for hot summer days. I’ve said it many times here at JustineCelina, but I believe you can nourish and treat yourself at the same time. These cheerful summer popsicles are packed full of so many amazing vitamins and nutrients — largely in part to the gorgeous, golden kiwis used in this recipe. DRAGON FRUIT BUBBLE TEA SMOOTHIE


When I was at the Asian market last week, I was in awe of the bubble tea selection. There must have been over 50 varieties on the menu! Taiwanese bubble tea is something I love as a treat occasionally, but I know it’s full of less than desirable ingredients and tons of processed sugar. So I decided to create a bubble tea inspired smoothie at home with the beautiful dragon fruit I picked up at the market! My Dragon Fruit Bubble Tea Smoothie is full of healthy, nourishing ingredients, vitamins and antioxidants. I like to enjoy it post-workout because it’s also loaded with clean, plant-based protein. A delicious chia seed pudding base mimics the texture of the black tapioca pearls usually seen in bubble tea, while a spring-inspired combination of dragon fruit, banana, mango, strawberry and creamy Vanilla Almond Breeze gives the smoothie its natural sweetness and soft pink hue. If you’re in the mood for something exotic, try my healthy spin on bubble tea!

20+ PLANT BASED SPRING RECIPES


Spring is definitely in the air… can you feel it?! The weather is absolutely beautiful here in Calgary as we approach Spring Equinox — and I couldn’t be more thrilled! I’ve been taking every opportunity to get outside to enjoy long walks, runs and hikes as I work towards my health and wellness goals. Each year as we transition into spring, I also find myself  lightening up our meals and incorporating lots of fresh, seasonal produce, edible flowers and bright, herbaceous flavours! Over the last couple of years I’ve begun publishing seasonal recipe roundups here at JustineCelina — and in reviewing my archives, was surprised to discover that I hadn’t yet created a spring version. So, I’ve scoured my virtual recipe box to compile my favourite 20+ Plant Based Spring Recipes across culinary categories, from breakfast through happy hour! If you’re looking for some healthy, veggie-centric (and largely vegan), spring meal ideas utilizing all the gorgeous seasonal produce available to us from March though June, you’ve come to the right place!

Happy Saturday, friends. How’s everyone doing? These are certainly strange and uncertain times. Never in my wildest dreams did I imagine blogging about this topic, under these circumstances! But like many of you, I’ve been reflecting on how I can best serve my community in this time of need — and its been so heartening reading stories of individuals and businesses stepping up to care for one another. I’ve always taken great comfort in preparing nourishing meals for myself, my family and my friends — and that extends to all of you! In light of recent world events and the different realities we’re all currently facing in this unprecedented situation, this week I focused on what I could do here at JustineCelina to help. As we spend more time in our homes over the next few weeks (or months) and adapt to a new normal, we’ll inevitably be cooking and eating more meals at home — something I’m very passionate about.
