JANUARY BLUES, 2018 PLANS + MY 300TH BLOG POST!


I kept flip flopping back and forth about this post — and that’s part of the reason it’s getting to you on February 1st, rather than January 1st. Should I just publish the TREND GUIDE I had originally planned for these photos? Should I save these thoughts for a traditional New Year, New Goals style post, or my 3rd Blogiversary? Should I open up about all these things? Or should I just proceed with regularly scheduled programming? Do people like more personal posts? Is it okay to publish 2 posts in one day? Will anyone even notice or care?

These are exactly the kind of over analytical, consuming thoughts that I can pretty much guarantee all creatives, bloggers and content creators have faced at one point or another while they’re in the process of creating whatever it is they create. But today, instead of the FASHION content I had originally written to accompany these images, I’m going to share something that’s been on my heart and my mind for the entire month of January. This year, there will be no New Year, New Goals post, like I’ve published every January since starting JustineCelina almost 3 years ago. There aren’t any styled flatlays with planners, coffee and flowers today — because here’s the truth. If you want to make real changes in your life, all the planners, scheduling tools and cute stationary in the world won’t do it for you. Only you can do that for yourself. So today, it’s just me.

VEGAN FIESTA BUFFALO TOFU BOWLS WITH TAHINI LIME CREMA


Wait I’m confused… what season is it? Watermelon is still front and centre at my local grocer and yet it’s snowing (oh, how I wish I was kidding). As I edit this post, I’m enjoying a glass of crisp rosé in a poncho and fuzzy slippers — and I finally have to cave and turn the heat on! While the weather in Calgary has been less than desirable, late summer harvest has been kind to us with local tomatoes, cucumbers and lettuces popping up everywhere — and I’m taking full advantage. If you, too are in the mood for some healthy comfort food to weather the storm, you’ve come to the right place! Today I’m elated to continue my partnership with Inspired Greens and bring you my Vegan Fiesta Buffalo Tofu Bowls with Tahini Lime Crema — the meal that kept us nourished during our paint-a-thon this summer. I literally came up with this recipe by throwing what we had on hand into a big salad bowl, mixing it up and serving it. Upon first bite, I knew I’d be publishing it — after all, unusual circumstances typically lead to some of my most inventive recipe ideas!

My Vegan Fiesta Buffalo Tofu Bowls with Tahini Lime Crema are a healthy, plant based, 30-minute meal alternative to the pub food that my delicate stomach can absolutely not handle anymore. Seriously though — if chicken wings, a plate of loaded nachos and a burrito had a vegan love child, this would be it! These festive, protein rich bowls are brimming with Alberta grown, seasonal produce including Inspired Greens Red Butter Lettuce — remixed with JustineCelina kitchen staples like quinoa, black beans, olives, Buffalo Tofu (a completely addictive, plant based alternative to hot wings!) and Tahini Lime Crema — a versatile sauce we always have in our fridge that’s good on just about anything. This, my friends, is the ultimate vegan comfort food with a fresh, early autumn spin!

AHI TUNA POKE BOWLS WITH CITRUS PONZU + SRIRACHA AIOLI


To say I went poke crazy in Vancouver this spring would be a major understatement. Typically, I don’t eat meat very often (I’m actually not vegan, although I eat that way about 90% of the time and have included a vegan option in this recipe) — but anytime I travel, I love to immerse myself in local cuisine. It’s such a treat to be able to indulge in fresh seafood on the coast! After making one too many poke runs when I landed back home in Alberta, I decided to take matters into my own hands and develop a recipe for the ultimate gluten and dairy free poke bowls at home! My Ahi Tuna Poke Bowls with Citrus Ponzu & Sriracha Aioli are an explosion of traditional Japanese flavours infused with a west coast vibe and all the fixings — a mashup of sustainable, sashimi grade ahi tuna, avocado, carrot, cucumber, mango and grilled asparagus adorn a bed of organic brown rice and tender greens, topped with a scratch made, Gluten Free Citrus Ponzu, drizzled with Sriracha Garlic Aioli and garnished with roasted sesame seeds, nori and scallions. They’re even better than the poke bowls I fell in love with by the sea!

I’ve partnered with Inspired Greens to bring you a lightened up version of the classic poke bowl where I’ve used a blend of Inspired Greens MultiLeaf Trio and organic brown rice as the Ahi Tuna Poke Bowl base. EASY HOLIDAY ENTERTAINING IDEAS


With the holidays just around the corner and the height of entertaining season upon us, I’m elated to share my go-to Easy Holiday Entertaining Ideas in my first dedicated ENTERTAIN post in… gulp… 3 years! The absence of entertaining content here at JustineCelina in recent years has happened authentically, as we’ve scaled back on entertaining in general — simply because life is busy (I’m sure you can relate, especially at this time of year!). Although we love to have an apartment full of company eating, drinking and be merry during the holidays, I’m all about making this festive time of year as fun, stress free and healthy as possible — and that’s what this post is all about! Whether you’ve been with me for years or are new to my cozy little corner of the internet (welcome!), you’ll know I also love to incorporate better-for-you food and drink whenever we’re hosting or attending a party — because I believe in balance and mindful choices in every season of life.

Earlier this month as I pulled out our festive decor and entertaining essentials I discovered Kombrewcha — a delicious, 4.4% ABV hard kombucha made from organic ingredients. As a plant based eater with a sensitive stomach thanks to numerous food intolerances, I’ve long enjoyed kombucha as a way to help keep my digestion on track — especially during the holidays! I also love to mix this effervescent, probiotic-rich, fermented tea into my COCKTAILS (if you follow along with my Instagram Stories, you’ll know I’ve been developing kombucha cocktails since last summer!). Happy Saturday! Today I’m sharing the recipe for my Golden Kiwi Piña Colada Popsicles — a nourishing summer treat made with freshly blended tropical fruit, nutritious greens and decadent coconut cream. These popsicles are all-natural, vegan and free of refined sugar and gluten. Although they taste like a tropical cocktail, they’re made with just 5 ingredients and they’re fun, quick and easy to prepare! They’re picky eater tested and kid approved, making them family friendly and a perfect sweet indulgence for hot summer days. I’ve said it many times here at JustineCelina, but I believe you can nourish and treat yourself at the same time. These cheerful summer popsicles are packed full of so many amazing vitamins and nutrients — largely in part to the gorgeous, golden kiwis used in this recipe.
