Are you ready for autumn, friends? It’s been a crazy hot, smoky summer this year and I never thought I would say it, but I’m finally ready for fall. I had 2 food related epiphanies as I worked on this post — first, I really seem to love creating dessert-inspired breakfast recipes (I mean… who doesn’t love pie for breakfast?!) and second, I’ve never published a peach recipe here at JustineCelina. If you knew just how much I loved peaches, you’d be as shocked as I am! Each year we receive a shipment of peaches straight from a family friend’s orchard in British Columbia (if you’re keeping track, yes – it’s the same orchard where our apple surplus and endless supply of homemade stewed tomatoes come from!). It seems every year I find a different way to work with them and they end up trickling into almost every meal for a week or two until we get through them all. And alas, another seasonal recipe is born!
Today I’m bringing you my Superfood Peach Pie Smoothie Bowls — a simple, seasonal breakfast bowl inspired by the classic late summer pie and brimming with powerhouse ingredients, plant based protein, antioxidants and healing, autumnal spices. The best part? If you, too are experiencing peach overload, this recipe actually gives variations for frozen and fresh peaches (I just finished freezing a whole ziplock bag full!). I even snuck a vegetable in there — if you’ve made my Cherry Crumble Smoothie or Autumn Energizer Juice, you may have an idea what it is! Try my Superfood Peach Pie Smoothie Bowls while those juicy Okanagan peaches are at peak ripeness or freeze them now and indulge in a peach pie inspired smoothie bowl anytime you want to treat yourself to a quick, nourishing breakfast this autumn. As always, it’s free of dairy, gluten and refined sugar — and absolutely delish!
SUPERFOOD PEACH PIE SMOOTHIE BOWLS
Millions of peaches, peaches for me. Millions of peaches, peaches for free. Have you guys ever watched that music video?! I googled it when I was writing this post and I’m so glad I did. You’re welcome.
I’ve been experimenting with this recipe since our first wave of Okanagan peaches came in earlier this month — but it was one of those ones easy ones that came together quickly (I love it when that happens!). If you’ve been following along with my Insta Stories lately, you’ll know we ended up with tons more fresh peaches (and lots of other orchard fresh goodies!) this week — and I enjoyed a Superfood Peach Pie Smoothie Bowl for breakfast everyday before freezing our remaining peach supply tonight! They truly couldn’t be easier and they’re perfect for these late summer days. The toppings are really what set these peachy breakfast bowls off — my favourites are pepitas, goji berries, chia seeds, hemp hearts and shredded coconut with a dash of nutmeg, but have fun with them and feel free to use whatever you have on hand!
But before we get there, let’s chat about the superfood ingredients that make this peach pie inspired breakfast bowl so nourishing. Peaches, our star ingredient, are a great source of calcium, fibre, potassium, magnesium, iron, manganese, phosphorous, zinc and copper. Cooked sweet potatoes are my favourite way to add tons of extra nutrition and a rich, velvety texture to my smoothies and juices. They’re high in vitamins A, B, C, beta-carotene and fibre. Bananas are another go-to smoothie ingredient for me — they add a lovely natural sweetness and an additional onslaught of vitamins, minerals, fibre and prebiotics. A scoop of plant based protein powder adds another level of creaminess and clean, plant based protein. A kiss of fresh lemon juice works to enhance and brighten our fruity flavours with a healthy dose of vitamin C — while a trio of cinnamon, nutmeg and fresh ginger bring an autumnal warmth and healing properties to these Superfood Peach Pie Smoothie Bowls.
INGREDIENTS
Yield: 1 large smoothie bowl or 2 small smoothie bowls — 3 cups or 24 oz.
SUPERFOOD PEACH PIE SMOOTHIE
Ratios for fresh peaches
• 2 fresh peaches (1 and a half for the smoothie, half for garnish)
• 1 scoop vanilla protein powder
• 1 cup frozen bananas
• 1/2 cup cooked sweet potato
• 1/2 cup almond milk
• 2 tbsp fresh lemon juice
• 1/2 tsp fresh ginger
• 1/4 tsp nutmeg
• 1/4 tsp cinnamon
Ratios for frozen peaches
• 1.5 cups frozen peaches
• 1 scoop vanilla protein powder
• 1 cup frozen bananas
• 1/2 cup cooked sweet potato
• 3/4 cup almond milk
• 2 tbsp fresh lemon juice
• 1/2 tsp fresh ginger
• 1/4 tsp nutmeg
• 1/4 tsp cinnamon
GARNISH
• 1/2 a fresh peach
• Pepitas
• Unsweetened shredded coconut
• Hemp hearts or chia seeds
• Goji berries
• A dash of nutmeg
INSTRUCTIONS
1. If you don’t have frozen bananas (or peaches) on hand, you’ll need to make some! Frozen bananas is absolutely essential for a thick, creamy smoothie bowl (trust me — you’ll thank me later!). To make them, simply peel and slice your bananas, chop your peaches, then add them to plastic bags and freeze for at least 4 hours.
2. Then, cook your sweet potato. For a super quick method, dice a 1/2 cup of sweet potato and add it to a 1 cup glass measuring cup. Fill the measuring cup with water, covering the potatoes. Microwave on high heat for 2 (until the water boiling). Strain the potatoes and allow to cool before adding to the Vitamix (or similar) with the rest of your ingredients. Can’t wait? That’s okay — you can add them right away, your smoothie will just have a thinner consistency.
3. Mince ginger and add with the other to the Vitamix (or similar).
4. Blend until smooth.
6. Pour the Superfood Peach Pie Smoothie Bowls into serving bowls and garnish with fresh toppings. Some of my favourites include fresh peach slices, pepitas, unsweetened shredded coconut, hemp hearts, chia seeds, goji berries and a dash of nutmeg
7. Serve immediately!
