Have you ever had a Shamrock Shake? I can honestly say that I haven’t, but I know the limited edition Shamrock Shake has a cult following, and people go nuts over it every year come mid-February. The shake is minty and creamy, and I thought it would be fun to put a healthy spin on it for St. Patrick’s Day. I need to get my St. Patty’s beverage fix in somehow, and my green-beer-drinking college days are long gone (hey, I am half Irish, after all)! My Superfood Shamrock Smoothie is dairy free, gluten free and vegan, plus it’s made without food colouring and refined sugar.
SUPERFOOD SHAMROCK SMOOTHIE
This smoothie is loaded with spinach, avocado and mint, which give it its signature green hue naturally. This also means it’s full of vitamins and antioxidants that aid in maintaining overall immunity, detoxification, heart health, good skin, vision, and strong bones. The vitamin K in spinach helps your brain to function at optimal capacity, so you can feed your mind instead of killing brain cells! Banana and avocado give the smoothie it’s thick, indulgent texture and sweetness, while the vanilla seeds add a soft vanilla essence, similar to the taste of vanilla soft serve. Enjoy my Superfood Shamrock Smoothie whenever you’re craving something creamy, cool and refreshing.
Ingredients
Serves 1, meal size
• 1 cup frozen banana
• 1/4 an avocado
• 2 cups spinach
• 1 cup mint leaves
• 3/4 cup unsweetened coconut milk
• 1 scoop vanilla protein powder
• Seeds from 1 vanilla pod
Instructions
1. Combine all ingredients in your Vitamix (or similar) and blend until smooth.
2. Add your smoothie to the serving glass.
3. If you want a little chocolate fix, sprinkle a few chocolate chips (or carob chips, if you’re vegan) on top, and garnish with a few mint leaves. You can also blend a small handful of chocolate or carob chips into your smoothie.
4. Serve immediately and enjoy!
